Twilight Summer Ale Watermelon Ceviche


  • 1 lb White Fish (halibut, cod or similar) ¼ inch dice
  • 1 lb Crab meat-cleaned
  • 1 C small seedless watermelon- ¼ inch dice
  • 2 Tbsp fresh cilantro, chopped fine
  • 1 Tbsp shallot, chopped fine
  • ¼ C Twilight Summer Ale
  • ½ C Fresh Lime juice
  • ½ Each Jalapeño-seeded/sliced paper thin
  • 1 Tbsp fine Sea Salt


  1. Cut white fish into a medium dice, put into brine: lime juice, Twilight Summer Ale, sea salt, set in cooler
  2. Prep all other ingredients, set aside
  3. After the fish is slightly “cooked” add crab meat
  4. Add remaining ingredients and season with salt and extra lime if necessary
  5. Chill and serve with tortilla chips and a Twilight Summer Ale
