Twilight Summer Ale Watermelon Ceviche
INGREDIENTS
- 1 lb White Fish (halibut, cod or similar) ¼ inch dice
- 1 lb Crab meat-cleaned
- 1 C small seedless watermelon- ¼ inch dice
- 2 Tbsp fresh cilantro, chopped fine
- 1 Tbsp shallot, chopped fine
- ¼ C Twilight Summer Ale
- ½ C Fresh Lime juice
- ½ Each Jalapeño-seeded/sliced paper thin
- 1 Tbsp fine Sea Salt
DIRECTIONS
- Cut white fish into a medium dice, put into brine: lime juice, Twilight Summer Ale, sea salt, set in cooler
- Prep all other ingredients, set aside
- After the fish is slightly “cooked” add crab meat
- Add remaining ingredients and season with salt and extra lime if necessary
- Chill and serve with tortilla chips and a Twilight Summer Ale
