Chainbreaker White IPA Mustard


  • 1 C      sugar, granulated
  • 1 C      sugar, brown
  • 2 C      mustard, dry
  • ½ C     mustard Seed, brown
  • 4 each  eggs
  • 1 C       Chainbreaker White IPA
  • 2 C       vinegar, rice
  • 1 tsp      salt
  • 1 tsp      xanthan gum


Fill a small pot half way with water and bring to a simmer. Stir the mustard and sugar together in a large bowl. Add beaten eggs, beer and vinegar. Stir over the simmering water until thickened, about ten minutes. Move the bowl to an ice bath and add the salt and Xanthan gum, and whisk or immersion blend until cool. Serve with pretzels, pub burgers or bratwurst.
