Beer, Brussels Sprouts and Bacon


  • 2 lbs. brussel sprouts, cut in halves
  • 6 oz. thick bacon, chopped
  • 1 medium yellow onion, chopped
  • 1/2 C Deschutes River Ale
  • 1 C water or low sodium chicken stock
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Pinch crushed red peppers


Trim the ends of each brussel sprouts, removing excess leaves and cut them in half

Place a large skillet over medium heat and add the chopped bacon and saute until crisp

Add onions and saute 2-3 minutes to soften

Add brussel sprouts and stir for 5 minutes

Pour the beer into the skillet and add salt, pepper and red peppers

Bring to a boil and simmer until the beer has reduced to a glaze and the brussel sprouts are cooked through 15-20 minutes
