Beer Bolognese Fettuccine

INGREDIENTS

  • 1.5 lbs ground Italian pork sausage
  • 3 Tbl olive oil
  • 1 medium onion, chopped
  • 2 (14.5 oz) cans fire roasted crushed tomatoes
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 C Armory XPA
  • 1 lb fettuccine
  • 3 cloves garlic, minced
  • 1/2 C half & half
  • 1/2 C sliced fresh Parmesan cheese
  • 1 Tbs parsley, chopped
  • 1 Tbs fresh basil, chopped
  • 3 oz tomato paste
  • salt
  • pepper
  • 1/2 tsp oregano, dried
  • garnish: fresh basil

DIRECTIONS

  • cook the meat in a skillet until brown
  • add olive oil, onion, garlic, celery, and carrots to a large pot and cook for 2-3 minutes
  • add meat to pot with salt, pepper and oregano and stir
  • add tomato paste and cook 1-2 minutes
  • add beer to mix and reduce for 2 minutes
  • then add canned tomatoes and half & half
  • stir and simmer for 30 minutes
  • boil water in a separate pot for fettuccine, add fettuccine and cook 8-10 minutes
  • at the end of the 30 minute simmer, remove from heat and add parsley, basil and cheese
  • serve sauce over pasta with a glass of Armory XPA and garnish with basil and Parmesan cheese!
