Spicy Mac with Prawns
Sauce
1 quart heavy cream
6oz thai sweet chili sauce (available in bottles)
2oz Sarachi (aka…rooster sauce, also in bottles)
Spice Mix
1 Tbs Kosher salt
1 Tbs granulated sugar
1 Tbs cumin
1 Tbs chili powder
1 Tbs black pepper
1/2 cayenne pepper
2 Tbs paprika
1 Tbs ground sage
1 Tbs golden brown sugar
1 box fussili pasta (cooked)
5 large prawns
1 bag shredded white cheddar
Directions
In a heavy-bottom pot reduce cream by 1/4. Add the rest of the sauce ingredients and stir very well. Toss 8 oz of sauce per 1 ½ cups of cooked pasta. Place pasta in a small casserole dish and place raw prawns along the sides of the casserole dish. Sprinkle a generous amount of the spice mix on the pasta. Cover with shredded white cheddar, then a sprinkling of bread crumbs and then a bit more cheese. Cook in the oven at 400 degrees until sauce is bubbling, cheese melts and the prawns are cooked all the way through (about 15 min). Tastes great with a pint of Red Chair NWPA on a cold, winter evening!
