Pub Tots with Malt Aioli

INGREDIENTS

  • 1 ½ lb Kennebec Potatoes
  • 4 oz shredded pepper jack cheese
  • 1 oz shredded parmesan cheese
  • ½ tsp granulated garlic
  • ½ tsp black pepper
  • ½ tsp kosher salt
  • 2 eggs
  • 2 Tbs water
  • ½ C flour
  • 2 C pankoMALT AIOLI
  • 1 C mayonnaise
  • ¼ C malt vinegar
  • ¼ C vinegar
  • 2 Tbs chopped parsley
  • 1 tsp chopped garlic
  • 1 tsp kosher salt
  • ½ tsp black pepper

DIRECTIONS

Simmer potatoes for 40 minutes, until fork tender. Peel and grate potatoes while warm. Combine with all cheese, garlic, salt & pepper. Roll into 1” diameter logs. Cut into 2” pieces set aside and chill.

Beat eggs with water and roll each tot in flour, then egg wash, and then panko. Fry at 350* for 3 minutes.

AIOLI

Whisk together all ingredients, chill and serve in small dish alongside tots! Tastes great with Inversion IPA!
