Northwest Crab and Halibut Cakes
2 lbs crab meat
2 lbs halibut
2 Tbs coriander
1 Tbs butter
2 Tsp garlic, chopped
4 oz Dijon Mustard
4 oz lime juice
2 Tsp fennel seed
1 C panko
2 Tsp ground mustard seed
1 Tsp salt 1/2 Tsp black pepper 1/2 bunch cilantro
Season halibut with coriander and place in pre heated oven at 350 to roast off for 15 minutes. Allow halibut to cool and then break apart and mix with crab meat.
While halibut is cooling, mix together all other ingredients in a bowl. Mix in crab and halibut. Portion off into desired cake size.
Cook in a saute pan with olive oil til lightly browned on both side and serve with a spciy tartar sauce.
