Mirror Pond and Citrus-Cured Prawns

1 12oz bottle Mirror Pond Pale Ale
6oz fresh orange juice
2 cloves garlic, chopped
1 Tbs soy sauce
1 tsp ground cumin
1 tsp chili powder
3 sprigs fresh cilantro
24 large Prawns (peeled, deveined and cleaned)
1 Tbs olive oil
2 Tbs butter
1 tsp chopped parsley


Combine the all the ingredients for the marinade. Pour over prawns and refrigerate for 8 hours. Remove prawns from marinade and season lightly with salt and pepper. Preheat large sauté pan to medium high. Add 1 Tbs olive oil to pan. Sauté prawns until just done. Remove prawns from pan and toss with butter, parsley and cilantro. Can be eaten as is or tossed with pasta.  Garnish with parsley. Serve with Mirror Pond Pale Ale.
