Black Butte Porter-Marinated Rack of Lamb
2 20 oz racks of lamb
1 sprig fresh rosemary
1 sprig fresh mint
1 sprig fresh thyme
1/2 C olive oil
2 12oz bottles Black Butte Porter
2 oz garlic, finely chopped
4 oz shallots, finely chopped
1 Tbs Kosher salt
12 whole black peppercorns
1 tsp cayenne pepper
Place lamb racks in deep casserole dish. Combine the rest of the ingredients for the marinade in a bowl, pour marinade over lamb racks, cover, and refrigerate overnight.
Preheat oven to broil. Remove lamb from marinade and place on broiling pan. Broil lamb on top oven rack, turning every 4-5 minutes until internal temperature reaches 135 degrees. (About 15-20 minutes)
Carve racks into individual chops and serve with Green Beans, Roasted Potatoes and Black Butte Porter!
