BBQ Prawns with Lime Hop Marinade
Ingredients
1 qt cold water
2 limes for zest
3 Tbs fresh or dry hop buds, rough chop
1 oz kosher salt
1 Tbs black pepper
2 lbs large prawns, peeled and devained
Directions
Combine all ingredients and pour over raw prawns in a large sealed bag or container. Refrigerate and marinate overnight. Grill prawns on the BBQ until they are nice and pink.

Hop Henge Scallop Ceviche
Ingredients
4 large sea scallops, medium dice
6 hot house tomatoes, medium dice
1 seedless cucumber, medium dice
1/2 C fresh parsley, chopped
1/2 C fresh colantro, chopped
1/4 C extra virgin olive oil
4 C Hop Henge Experimental IPA
4 C lime juice
2 jalapenos, sliced paper thin
1/2 C salt
1 C fresh spinach, cooked, drained and chopped
Pinch of salt and pepper to taste
Grilled Copper River Salmon with Whole Grain Mustard Vinaigrette
INGREDIENTS
1.5 lbs Copper River Salmon
1 Tbs salt and pepper
2 Tbs whole grain mustard (use yellow mustard if you don't have whole grain mustard)
1 Tbs dijon mustard
4 oz red wine vinegar
Juice of 1 lemon
2 C olive oil
DIRECTIONS
Prepare grill to medium heat. Lightly season Salmon with salt and pepper.
