Spicy Italian Sausage

Ingredients

4 lbs ground pork
1 Tbs red pepper flakes
1 Tbs garlic, minced
2 tsp ground black pepper
4 tsp salt
1/4 C Black Butte Porter
2 Tbs anise or fennel seed
1 tsp cayenne pepper

Directions

Combine all ingredients well. Form into patties and grill until done. You can also form into meatballs and bake at 350 degrees until completely cooked and serve over pasta with a marinara sauce and a Black Butte Porter.

Black Butte Porter Spice Cake

Ingredients

3 C all-purpose flour
2 ½ tsp baking soda
1 tsp salt
2 ½ tsp cinnamon
1 tsp nutmeg
1/4 tsp ground cloves
1 C sugar
1 C vegetable oil
1 C molasses
1 C Black Butte Porter

Directions

Butter and flour a 9x9-inch cake pan. Combine all dry ingredients in a bowl. In a separate bowl, combine liquid ingredients. Slowly add liquid to dry ingredients mixing well and pour into prepared pan.

Black Butte Steamer Clams

INGREDIENTS

3 lbs clams
4 - 5 slices bacon, chopped
1 Walla Walla sweet onion, chopped
6 ounces Black Butte Porter

DIRECTIONS

Cook bacon until cooked halfway, then add chopped onion. Cook until bacon is golden brown. Add clams, then half a bottle of the Black Butte Porter. Steam for 7 - 8 minutes until clams pop open. Stir bacon, onions and beer mixture over top of clams so all are mixed well together.

2 racks of baby back ribs
1 yellow onion
2 cloves garlic
3oz butter
5oz Worcestershire sauce
1 Tbs Tabasco
1 Tbs granulated garlic
6 C chili sauce
1/2 tsp black pepper
1 tsp white pepper
2oz lemon juice
1 pinch cayenne pepper
1.5 C honey
1/2 C molasses
1 tsp Salt
2 12oz bottles Black Butte Porter plus extra for braising

Brewery Mustard with Black Butte Porter

Ingredients

1/2 C dry mustard
2 Tbs granulated sugar
2 Tbs malt vinegar
1/8 C honey
2 Tbs lemon juice
3/4 C mayonaise
1/4 C Black Butte Porter

Directions

Mix the dry ingredients together in a bowl. Add the vinegar, honey, and lemon juice to the dry ingredients and mix together until it forms a thick paste. Add the mayonnaise and mix thoroughly. Finally, gently stir in the Black Butte Porter.Serve as a soft preztzel dip or as a sandwich spread. It's all good!

Black Butte Porter-Marinated Rack of Lamb

Ingredients

2 20 oz racks of lamb
1 sprig fresh rosemary
1 sprig fresh mint
1 sprig fresh thyme
1/2 C olive oil
2 12oz bottles Black Butte Porter
2 oz garlic, finely chopped
4 oz shallots, finely chopped
1 Tbs Kosher salt
12 whole black peppercorns
1 tsp cayenne pepper

Directions

Place lamb racks in deep casserole dish. Combine the rest of the ingredients for the marinade in a bowl, pour marinade over lamb racks, cover, and refrigerate overnight.
