Trappist Weiss!!We took the malt bill of a trappist style (our version, of course), and the rumored boil of the monks: adding sugar to the kettle and boiling to carmelize, and then and then adding hops. We fermented this with a weiss strain gaining light esters of banana and bubblegum. YUM!
