Miss Spelt was a heffeweizen that we worked with
for a while about two years back. We decided to brew
it again and this time allowed it to sit in our kettle
with a sour wort culture for 24 hours. The result is
a beer with nice fruit qualitites and a refreshingly
light but tart finish.
