We Love Beer

Here at Deschutes Brewery, we love beer.  No matter the color, flavor, alcohol content, or origin, we are willing to give it a try.  This attitude, this willingness to step outside the box and try things others aren’t interested in, has created brews that are original in their styles and flavor, such as The Abyss, The Dissident, Red Chair NWPA, and Hop Henge Experimental IPA.

“As far as ingredients and recipes go, we can try pretty much anything we want,” says Paul Arney, head brewer at the Bend Public House.  “Thanks to Gary Fish (owner) and Larry Sidor (brewmaster), and their commitment to quality, we are able to try unconventional methods, which often result in a delicious beer we never could have discovered.”

Access to four brewhouses doesn’t hurt either.  The Bend pub, with its 12-barrel English style system, is better suited for developing more traditional ales, such as Bachelor Bitter, Rooster Cream Ale, and test batches of the reserve series like Black Butte XXII.  Cam O’Conner, head brewer at our Portland Public House, works with a 20-barrel German brewhouse and can create incredible lagers and more traditional German beers such as Miss Spelt Hefeweizen.  Using these smaller brewhouses to test materials and develop recipes gives Deschutes an advantage in churning out creative new beers to satisfy our thirsty customers.  Once a recipe has been dialed in, it can move onto the 50-barrel JV brewhouse or 150-barrel Huppmann system, both located at our production facility.

Keeping with our unconventional methods, Deschutes Brewery uses some innovative ingredients to keep taste buds intrigued.  “We have been working with Theo Chocolate in Seattle for Black Butte XXII test batches.  They are the only organic, fair-trade, cocoa nib to chocolate bar factory in the country, extremely high quality,” says Arney.  “The addition of fresh Seville orange with the chocolate in a beer, we may be the only brewery around to try that.  We’re also doing chili pepper experiments, to see what kind of spicy flavor attributes we can get from that.”  Other chili beers have been experimented with at Deschutes, such as Ancho Oh Be Joyful, which was a huge hit in the summer of 2009.

Other beers brewed with unconventional ingredients have been found at the pub, such as Phil’s Trail Ale which has the surprising addition of Meadowsweet.  “This herb smells just like snowbrush, which grows wild here in Central Oregon.  On an early morning out mountain biking on Phil’s Trail, you can just smell the snowbrush in the air.  We wanted this beer to have that quality,” says Arney.

Bold and hoppy brews such as Hop Henge, an 8.75% experimental IPA uses cane sugar instead of more malt to create balance but allow the five pounds of hops per barrel to power through.  Doc Holliday, a Belgian brown was fermented with huckleberries for a mild tartness, and the Plum Bob uses traditional English Pale Ale ingredients, other than the addition of plum extract which adds a funky zing to the flavor.

Deschutes Brewery Barrel Aged Beers“With that beer, we wanted to try and get sourness without oak aging,” Arney says between sips of the tart concoction.

Barrel aging is another tool which is becoming more common to create new dimensions of flavor and also evoke a sour aspect in beer.  Deschutes now has hundreds of oak barrels in their library, some stained with bourbon and pinot noir.  Wild yeast, such as lactobacillus or brettanomyces, resides in these barrels and over a year or two’s time will transform a beer into a mouth puckering treat.  Additions of fruit, such as cherries in The Dissident, create a balanced beer that is flavorful and satisfying.

Holiday Obligations During the holiday season it is easy to feel scattered and overwhelmed. We may feel obligated to send cards, buy gifts, bake sweets, host parties, or give hostess gifts. But there is no need to feel any obligation when we commit to being our best selves as fully and sincerely as we can. Because then we are already giving the best and most precious gift we have to offer: our presence.

At any gathering, we each bring our own unique light to the party. When we think back on pleasant memories of events in our own past, we recall the fun and love that was shared, or the moments that touched us far more than anything else. A sense of obligation rarely brings out the joy within or moves us in any meaningful way. So as we walk through the holiday season, let us choose to only give what we can give joyfully, lovingly, and sincerely…whether the gift is a smile, a compliment, a handmade card, or friendship. Once out from under the “shoulds” we will be free to share the love and kindness we sincerely feel with those who we truly value from the mailman to our nearest and dearest.

Each gift we give and card we send carries the energy of our intention. If we are not giving from a true desire to share, it is a loss of time and energy that could be better spent by sharing lifes best gifts: love and joy. When we live each moment to the best of our abilities, then every second becomes a gift shared with the universe. Our positive choices have a ripple effect, touching those near and far, friends and strangers. In that way, sharing the light of our beautiful and unique presence becomes the best present we could possibly give, to ourselves and everyone else.

Official Deschutes Brewery Blog Kick-Off

In recent months I have spent quite some time on blogs answering questions, heading off false rumors and clarifying our company’s position vis-à-vis various industry events.  Additionally, I have spent some time observing our wonderful industry through the eyes (and fingertips) of some of our most ardent supporters.  Veterans and novices alike thrill to the variety, character, quality and innovation that characterizes the craft beer industry.  They vent their passions while sitting at their computers to online communities everywhere.  I cannot tell you how many beer blogs I now have book-marked that I check regularly.  Well, now we have our own.  This forum will allow you (and me) to check in on what Deschutes is doing, discuss the pros (and cons) of that activity, provide feedback on beers new and old, and be participants in your (and our) community of Deschutes Brewery and its beers.

We have put a bottomless pit of passion into providing what we love for the past 20+ years.  Now, we are broadening our scope to include as many of you as possible.  Personally, I’d still rather do this at our pub, face to face, over a beer.  But we are limited by today’s reality, but empowered by today’s technology.  I hope you will be enjoying a Deschutes beer while typing away so we can come as close to that pub experience as possible.  Because conversation without beer is like peanut butter without jelly, or ham without eggs.  It’s just not the same.

I hope you will join us.  Personally, I will be on there as much as I can and I look forward to seeing (typing) you there!

The Dissident, An Insider’s View from the Portland Pub

After all of the phone calls, drop ins and questions like, “Is it in today?” Deschutes Brewery’s the dissident release finally arrived! Immediately when the doors opened to the Portland pub this Wednesday at 11 am, people started rushing in to get their bounty of dissident brew. The first person who showed up purchased eight bottles, the next six, and on from there – lets just say, our stash is dwindling. The day was crazy! We were given an allotment of 30 cases from Bend and we already went through 18 cases in one day. People kept coming up to the front desk saying, “I’d like a t-shirt, a pint glass, and umm a case (twelve 22oz bottles) of dissident.”

Earlier on in the day, employees gathered around a back table to open and discuss the remarkable beer. One of the most frequent comments I received from customers was, “I didn’t know you could do this with beer.” Well everyone, you can make a sour brown beer, Bend decided to do it, and it is delicious. It has a very fruity and sharp taste to it that drinks so well and only gets better. It’s true, when you first taste it the immediate reaction is “whoa, beer?” But once your taste buds settle the next inclination is, “whoa, beer!”

The feedback and excitement surrounding this beer release has been overwhelming. We are expected to run out of the cases we received from Bend within the next day or so, and might possibly finish off the kegs by the end of the weekend. Everyone and their grandmother is buying this reserve series. You could tell how far the excitement spread when the general manager announced that Portland pub would be receiving Dissident t-shirts in-stock and all the employees lit up and let out a squished face, hissing “yesssss.”

I have never witnessed something quite like this – everyone who comes in is in tune with the uniqueness and quality of this beer. They are so excited about getting their hands on as much as they can. A dissident spell perhaps? The entire pub from servers, bartenders, hosts, clientele, and customers are all grinning and basking in the release. It has been a whole lot of fun and judging by the excitement and the sales thus far, I don’t know how much longer the fun will last, so be sure to come in this weekend and get the last few drops of Dissident.

Many of you may be wondering why I’m so excited about a “festive winter ale” in September, and to you my answer is simple – have you ever tasted Jubelale? Full of dark crystal malt, it’s nutty, it’s sweet and generally Jubelale samplesdelicious. Mmmm…..

 

So what prompted this sudden outburst of Jubelale love? Last night Deschutes Brewery held simultaneous Jubelale launch parties at its Bend and Portland public houses, offering a lucky few the opportunity to try the 2008 brewing before it’s release to store shelves in the beginning of October.

In addition to traditional Jubelale the pub was offering a special nitro Jubel and a menu of delicious beer infused options. We tried the “Pig’s Ear” dessert which was similar to an elephant ear (with bits of bacon incorporated into the dough) and came with caramel sauce and a Jubelale ice cream. Pretty tasty.

 

So, if you’ve got a craving for some Christmas in September, I’d recommend heading down to the pub and getting your hands on some Jubelale before word spreads and you can’t get a stool at the bar.
