Springtime in
Central Oregon

The birds are singing, the grass is turning green, the Junipers are pollinating, the mountain bikers are covered with mud and people are skiing and snowboarding naked (bring clothes just in case).

Lots of fun stuff over the next couple of months:
• April Fools’ Day (wear mismatched socks – it cracks people up)
• St. Patrick’s Day (once again we will be serving NO GREEN BEER)
• Spring Break (kegs are available at the Pub)
• Two great beer dinners (see menus next to calendars)

Brewery Expansion News!

It’s true!  Deschutes Brewery is expanding.  We are building a new warehouse, building a new brewhouse, receiving a new German-made brew system, and will be producing MORE BEER!

Our new brewhouse will have a 137.5-barrel brew system.  This means each brew will produce 137.5-barrel batches, which equates to 4,263 gallons (1 barrel = 31 gallons = 2 full size kegs).  This is quite an upgrade from our existing 50-barrel brewhouse.  The new system is scheduled to arrive in June 2003 from The Huppmann Group, a German company who has been in the brewhouse biz since 1874.  We should be making more beer by November 2003!

The site-work is complete for the new 35,000 square foot warehouse and we are well on the way to starting construction.  Beginning in February, you can expect to see more action on the newly acquired property located behind the Armory.  The warehouse will feature a keg cooler more than twice the size of our existing cooler, 5 shipping docks, skylights, and more!

From the Kitchen

Pan Roasted Pacific Halibut and Cinder Cone Red Butter
Serves 4
1-3/4  lbs. Fresh Pacific Halibut, Cut into 4 portions
1/4 cup chopped shallots
1/3 cup corn syrup
1/2 cup sugar
1/2 cup Cinder Cone Red
1/2 cup balsamic vinegar
1/2 cup salted butter

To make Butter:
In a heavy bottom sauce pan combine shallot, corn syrup, sugar, Cinder Cone Red, and balsamic vinegar.  Bring mixture to a simmer and reduce by half.  Let mixture cool and with a hand blender or mixer combine the butter and reduced mixture.  Mix for 2 minutes at medium speed.  Set the butter aside.

Cooking Halibut:
Preheat an oven to 350 degrees.  Season each portion of halibut with salt and pepper. Preheat a sauté pan at medium high.  Add 2 tablespoons of olive oil to pan, sear each portion of halibut, 1 minute on each side.  Place halibut in sauté pan in preheated oven.  Roast for 4 minutes. Remove Halibut from pan and place on plate. Top each piece of Halibut with a dollop of Cinder Cone Red butter.

Deschutes Brewery and COTA
Ride Again

As the mild winter continues in the Pacific N.W., COTA (Central Oregon Trial Alliance) members are already out in force preserving trails in the Central Oregon wilds, preparing for the upcoming cycling season.

Deschutes Brewery and COTA are again teaming up for the 2003 Cycling Season, partnering Phil’s Trail Ale with the desire to maintain and expand bike trails, building upon the success of 2002 where COTA’s membership was tripled.  The Phil’s Trail Ale cycling jersey will again be available due to popular demand and proceeds from the sale of the jersey benefit COTA.

The Bend Bicycle Festival celebrates its second year in conjunction with the annual COTA membership drive in May.  More information about the festival will be forthcoming in the next few months but activities include a bike swap, group rides and a classic cruiser ride in downtown Bend.

Deschutes Brewery Digs Deep For Alchemy...  Promotes Jason Randles To Marketing Assistant

Changing baser metals into gold and finding the elixir of perpetual youth is not his core strength, but Jason Randles has creative flair that some call transmutation.

"Jason has a natural and authentic aura that lends itself to unique and whimsical creativity," says Lesley Walthew, Associate Brand Manager.  And that's a good thing, because Jason will be extending his talents into the day to day direction of deschutesbrewery.com, both the public and distributor arms, as well as community relations activities.

Jason has been the point person for brewery wearable design and point-of-sale coordination for the past few years.  His transition to marketing will provide much desired alchemy.

Deschutes Brewery Cardboard

Thousands of onlookers cheered wildly as The Deschutes Brewery Barrel Sled raced to a second place finish in the Bend Winterfest Cardboard Sled Race last month at Mount Bachelor.  Designers Dave (Big Red) Addington and Tim (Baldo) Baldonado were also awarded first place for most original sled.

Way to go, guys!
